I enjoyed watching this fabulous recipe come together! I really love the way Eggs Benedict taste, but having prepared the dish with the traditional recipe I couldn’t help feeling guilty about eating such a high fat/high cholesterol dish. I didn’t think I’d ever have the opportunity to enjoy this dish in a healthy way. I’m going to try this recipe this weekend and indulge myself in a healthy plant-based way. Thanks Katherine, keep the great recipes coming – I’ll be watching!
I’ve never had eggs benedict because it looked so wrong to me, but I’ll try this! Breakfast is the hardest for me to find quality recipes for! You don’t want to do something super complicated first thing in the morning.
