Dangerous Vegan Tomato Hashbrown Soup


I had some potatoes and some tomatoes and zucchini leftover from bulk sizes I bought from Sam’s Club and decided to make a soup. It was really delicious. Note: Soup should be fun and use whatever you have around the kitchen. Experiment. If you aren’t vegan then some beef would be great in this. Ingredients: 2 onions 1 zucchini 3 russet potatoes 3 small tomatoes 1 can Campbells condensed tomato soup 12 oz almond milk (or use water) 1 can corn (I used Del Monte fiesta corn with peppers) oil or Earth Balance margarine garlic or garlic powder oregano salt black pepper crushed red pepper (heat to taste or omit) Technique: Heat the oil or margarine saute the following in the following order (all diced about the same size except the tomatoes which are sliced) onions potatoes zucchini tomatoes add spices to taste cook until potatoes are almost done add the corn, tomato soup and almond milk bring to boil then LOWER temp and simmer about 20 minutes.
