Ok, it’s Day 18 of Vibrant Vegan’s 30 Days, 30 Fruits for You Project! This project is one way we want to help you incorporate more fruit into your daily eating pleasures! Fruit can be eaten with every meal, as a meal, in-between meals; all day and everyday! Fruits are filled with fantastic nutrients that will help you live a most vibrant life! The Fruit for Day 18 is the magical, magnificent Mango! -Mangoes have been in the human diet for over 6000 years, and were first cultivated in Asia. -Mangoes are actually in the sumac family–other members of this family are pistachios, cashews, poison oak and poison ivy. -For a bit of folklore–it’s said the Buddha was given a whole grove of mango trees for resting in whenever he needed. From then on, the mango tree was held in awe and said to be able to grant wishes. -When choosing a mango for munching, make sure it’s slightly tender (gives a little when you press on it just a bit), has a deep yellow or red color (a little green is fine), and smells fruity on the stem end. -Unripe, or “green” mangoes are eaten quite often too–In Asia, green mango salads are common (with vinegar, lime juice, chilis). And in the Philippines, unripe mangoes are a snack sprinkled with salt or dipped into soy sauce. -Green mangoes will ripen if left out for a few days at room temperature.
